Homemade Goji Pecan Protein Bars

I’ve been working on this one for a little bit and I think it’s ready to be released! I’ve been eating these *every* day because they are so yum.

These bars are packed with good fats, proteins, and omega 3s. Coconut oil and nut butter contain healthy, unsaturated fats that boost your mind health and balance your metabolism. Chia seeds contain essential omega 3 fatty acids, as well as 4.7g of protein/serving (a great vegan protein option). Chia seeds are also know to balance hormones (so get your chia on, ladies!). Goji berries are an ancient Chinese super food, traditionally used to treat eye, liver, and kidney disease. These tiny berries contain all eight essential amino acids, nearly 10% of your daily protein intake per serving, and complex carbohydrates, which aid in balancing your blood sugar. Additionally, they contain a great quantity of antioxidants, which boost the immune system by fighting off free radicals in the body!! These bars are free of inflammatory foods such as oats, grains, added fillers/gums, and processed sugars. So you can 100% feel great about what you’re munching on!

Okay, so into the good stuff...

This is a non-bake, paleo granola bar.

Gluten free, dairy free, grain free, soy free.

What you’ll need:

•1/3 cup of melted, raw, unrefined coconut oil

•1/3 cup of organic almond flour

•1/3 cup of organic coconut flour

•1/4 cup of organic coconut sugar

•1/4 cup of organic dried goji berries

•1/4 cup of organic crushed pecans

•1/4 cup of organic black chia seeds

•1/2 cup of organic toasted coconut flakes

•2 tbsp of organic nut or seed butter (I used Abby’s Better Nut Butter, Pecan and Date flavor)

•2 tbsp of organic honey

•2 tbsp of filtered water

•1 tbsp of cinnamon

•1/2 tsp of organic alcohol free vanilla (I used Lafaza Madagascar Vanilla)

•Sprinkle of Himalayan pink sea salt

MIX all of these ingredients together in a bowl, until the all ingredients are evenly distributed. Line a 9 x 5 loaf pan with parchment paper and spread the mixture into the pan. Be sure to compact the mixture down with your spatula and smooth the edges down to make clean cuts for your bars! Place these in the fridge for a few hours and they’re ready to be sliced and savored! Lift the hardened mixture out with the parchment paper and slice them into 6 equal pieces (or any way you’d like!). These are best kept in the fridge, so be sure to store them in a non-toxic, air tight container, and place them back in the refrigerator.
